Maurice Bennett has developed the one essential thing Wellington didn't have - its own beer. Maurice's Island Bay Brewing Company calls the new beer Wellington Lager.
"Getting the name Wellington Lager was the coup de grace. Wellington needs its own beer. Dunedin has Speights, Christchurch has Canterbury Draught. You wouldn't go to Dublin and not have a Guinness, would you?" says Maurice.
Some 32 percent of the world's population drinks beer, and Maurice is keen for a slice of the action.
The slice is still small, with 400 litres a month brewed under contract, but the three beers launched so far - the Lager, a Classic Black, and the spiced Four Seasons Ale - seem full of potential after proving popular with drinkers and judges alike.
The first Bennetts brew, an Ardennes-style beer, was launched at Christmas 2002, and promptly won a silver in the International Malting Specialty Strong Beer section in 2003. This was followed up with another silver at BrewNZ. Bennett's Classic Black won silver at the 2005 international beer awards and Bennett's Four Seasons Ale won a bronze.
The brand is truly Wellington, marketed in yellow and black holders with a picture of the city.
"There have been requests to export to Taiwan and India, - I'm looking forward to getting Wellington Lager on tables over there," says Maurice.
